Dense, smooth on the palate, with a balanced umami flavour offering gentle salinity and a faint fermented complexity with a subtle savoury finish that lingers.

Used as a balancing component, it softens sweetness, amplifies roasted flavours and adds savoury depth.

Work well with ramen and noodle dishes, beef stews, as an addition to salmon and cod dishes. Excellent with roasted orchard and stoned fruit. Excellent with squash, sweet potato, celeriac, mushroom, chocolate and pear. Perfect also as an addition to a cheese course.
